Dr. Yokoyama received a B.S. in Chemistry from the University of California, Los Angeles, a M.S. Chemistry from California State College, Hayward, and a PhD in Biophysics from the University of California, Davis. Prior to joining USDA as a Research Chemist was a scientist in the Research and Development group of ConAgra/Hunt-Wesson, one of the largest U.S. food conglomerates. During Dr. Yokoyama’s 28 years with the USDA he has authored or co-authored over 100 refereed journal articles, is a co-inventor of a licensed patent, and has several patents pending. He has been Associate Editor for the Journal of Functional Foods. His research on the healthful nutritional properties of food components in animal models obesity has focused on the prevention of chronic metabolic diseases by dietary fibers and plant polyphenolics.
